  • Report must be of 600-800 words in length, using 11-point font, double-spaced, and must include a cover page, table of contents, introduction, body, summary or conclusion, and works cited.

Task:

Sustainability implementation report:

La pochette is a restaurant based in Melbourne, that is well-known for its Italian dishes. Annabella is the owner of the restaurant. The company wanted to be a member of restaurant chain called “Green hotelier” that supports sustainability at workplace. The company applied for its membership that was rejected because of the restaurant’s unfriendly environmental practices. The pivotal reason was the lack of sustainable environment. The company has been using plastic bags, spilling oil in drainages that are not only non-compliant with the “Green hotelier” policies but also breach the current legislations for sustainable practices. The restaurant’s inability to address these issues will have severe consequences as they are breaking stringent legislations in place. The owner of the restaurant wants to address these issues and improve their environmental footprint by implementing some more sustainable approaches to their work habits. The restaurant business will achieve the following benefits if they are able to register with Green hotelier:

  • Economic as restaurants and hotels will continue to come under increasing pressure from customers, regulators, investors and tour operators to employ green procurement policies.
  • Reduced operating costs through bulk buying from local suppliers, demanding reduced packaging, buying seasonally, etc.
  • Will be well recognised and will have better community relationships, increased customer loyalty, and improved morale and loyalty among staff.

Currently, organisation is using plastic bags for packaging that are not recyclable, costly and hazardous to environment. There is nobody at the restaurant who is responsible for ensuring that the restaurant complies with sustainability practices.

The government is also considering banning bottled water and plastic bags at official even bags as it takes lot of oil to make plastic, creating CHG emission in manufacturing and even though they can be recycled they often end up in landfill taking 1000 years to break down.

The current purchasing strategies of the restaurant are:

  • Usage of paper tablecloths and napkins
  • Table linens made with hazardous dyes and heavy metals and formaldehyde
  • Plastic cups and disposable table ware
  • Plastic bottles for drinks

 

 

Currently the organisation has no policies or procedures in place regarding sustainable practices.

The owner would like an all-encompassing policy that suggest strategies to address these issues. Annabella is thinking of a simple green proposal to implement at the workplace/restaurant. It might be effective to introduce a recycling scheme, use alternate source of energy such as solar energy and using better work practices and processes to address the oil spilling and other issues.

The goals of the restaurant are to:

  • Increase 40% of the paper packaging
  • Shrink packaging volume by 10%.
  • Cut off electricity prices by 50% using solar form of energy.
  • Using better work practices to ensure their compliance with current legislations.

  • Presentation may include diagrams, infographics, and pictures to be interactive and interesting.
  • Role plays provide students with the opportunity to take part in activities which mirror real life career-related scenarios.
  • During the role play, the assessor will be looking for:
    • Appropriate interaction, body language and communication skills
    • The student’s ability to establish rapport and defuse potentially difficult

situations

    • The ability to understand, interpret and answer the questions appropriately.
    • Suitably documenting and presenting the topics to audience.
    • The student meets the requirements of the unit of competency or performance criteria mentioned in the assessment task.

Assessment task Instructions:

  • This task is in continuation from assessment task 2.
  • This activity will require you to prepare a presentation and participate in a role play, assuming the role of a Manager.
  • Your assessor will act as owner/stakeholder.
  • This task is divided into two parts.
  • You will be required to prepare and present a handout about this information to all team members/trainer/assessor.
  • You will be required to prepare and present a power-point presentation to all team members/trainer/assessor.
  • You must develop 15-20 pages of Power-point slides containing relevant information from task 2 and given scenario.
  • Presentation delivery time is 15 to 20 minutes.
  • You will submit a preparatory work to you before presenting.
  • Your assessor must assess the performance as per the performance criteria and checklist provided.

 

 

Presentation and Role Play:

 

This assessment task is in continuation with assessment task 2. This task is divided into two parts.

First part requires you to identify the key information from assessment task 2, develop and present policies and procedures relevant to sustainability.

Second part requires you to take part in role play and discuss the sustainability practices presented in part 1.

You will continue to take on the role of manager given in the case study in previous assessment task and you assessor will act as owner/stakeholder.

The trainer will assume multiple roles for the scenario, rotating roles after each exercise. If the student is required to participate in multiple roles for the exercise, they will also switch after each round, of the role play scenario.

You have successfully investigated the current practices in relation to the work practices and work usage in previous assessment task.

Part 1:

After the initial investigation of current practices, usage of work resources and required improvements that you reported to the senior management relevent to the case study given in assessment task 2, you organised a meeting with the senior management that included stakeholders and owner of the organisation. The management was satisfied with the outcomes and wants you to develop policies and procedures and prepare a presentation that must include the following:

  1. Appropriate techniques and tools to assist in achieving efficiency targets
  2. Improvement plan
  3. Recommendations for a workplace sustainability policy, and develop the policy document.
  4. Develop a set of procedures to implement the policy.
  5. Activities and recommendations for improvements.
  6. Costing strategies to minimise the cost.

 

 

Part 2:

This is a role play activity.

After presenting the sustainability policies and procedures in part 1 of this assessment, you are required to consult the stakeholder and owner to seek input in relation to the developed policies and procedures encouraging their engagement, discussing the outcomes and seeking advice to implement sustainability improvements.

The discussion will be based on the following key elements:

  1. Current resource usage and purchasing strategies
  2. Rectify the problems and discuss future improvements
  3. Evaluate policies and procedures to improve resource usage and work practices
  4. Discuss the environmental requirements, and implementing requirements for the recognised need for improvements.
  5. Continuous improvement strategies
