Experiential Persuasion for Eating Well: Macronutrient Profiles of a Single Meal

General Information

The purpose of the first written assignment will be to evaluate the diversity and richness of macronutrients and fibre in a single serving of Salmon Rice Patties. The evaluation of the meal will be based on the data generated using the NutritionCalc Plus software. Included below are the steps to follow to create a new profile in NutritionCalc Plus and the amounts to enter for each ingredient in the recipe. At the end of this document I outline the details for what is expected in the write-up. 

 

**Note: This recipe was developed by Théa Demmers (P.Dt.) at Concordia’s PERFORM center. The best student report will therefore be featured on the PERFORM Center’s website. This can be a great opportunity for one deserving student to showcase their academic skills to a wide audience.** 

Instructions for Using NutritionCalc Plus

Step 1. Before using the NutritionCalc Plus software, you need to activate your Connect platform account. The instructions and registration code for activating your account is given in the PPT located here: 

 

NutritionCalc Plus is hosted within Connect. Once registered with Connect, you can access NutritionCalc Plus.

 

 

Step 2. Create a new profile in Nutrition Calc Plus. The profile will be for a 30-year-old male. Enter all the information as indicated in the screenshot shown here. 

 

Step 3. Go to Intakes and enter the ingredients and amounts shown here. The amounts provided here are for a single serving of Salmon Rice Patties (served as dinner)–do not use the amounts indicated in the recipe provided for this meal in Master Step 4. Go to Reports and select Spreadsheet Report. A copy of this report must be included in the Appendix section of your paper. Once the Spreadsheet Report is selected, you will be prompted to pick which meal you want to analyse. Make sure to select the Dinner option. (This, of course, will only matter if you’ve added other meals for the day.)

             

Step 5. Go to back to Reports and select Bar Graph Report. A copy of this report must also be included in the Appendix section of your paper. Once the Bar Graph Report is selected, you will be prompted to pick which meal you want to analyse. Make sure to select the Dinner option.

             

 

Step 6. Go to back to Reports and select Single Nutrient Report. Once selected, choose omega 3 and omega 6 fatty acids. 

 

Instructions for Write-Up

Your written report must adhere to the following structure and include section headings: 

With the two reports in hand, take some time to analyze and appraise the nutritional merits of this meal, focusing exclusively on macronutrients and fiber. The Spreadsheet report lists the number of calories and grams of selected nutrients contained within each ingredient of Salmon Rice Patties; the Bar Graph report summarizes the number of calories and grams of selected nutrients within a single serving of Salmon Rice Patties. You are expected to extract the most relevant numerical data and present these in a table. Note, that your table should reflect the extent of your analysis of the reports and relevant concepts learned within the course AND required readings. The data you select to present in your table will form the basis of your write up.  

  1. Title (5%). Your report should include a descriptive title. 

 

 

  1. Introduction (20%). The introduction should be clear, specific, and brief. The information provided should also be relevant to the purpose of the written report. The purpose of this report is to evaluate the diversity (types) and richness (amounts) of macronutrients and fiber within a single serving of Salmon Rice patties. Your introduction should therefore prepare your readers for such an analysis. End your introduction by clearly articulating the objectives of your written report. 

Maximum 1 page. 

  1. Main Body (50%). The main body will contain your analysis of the data generated from the NutritionCalc Plus reports. Your table belongs in this section. In your write-up, you are analysing and appraising the diversity (different types) and richness (the amounts) of macronutrients and fibres in this meal. For example: how many different kinds of lipids does this meal contain?; why does this meal contain some fats or carbohydrates and not others?; why do some ingredients contain more carbohydrates, proteins, fats, fiber than others? Remember, the nutrients did not fall from the sky into this meal–they are derived from the ingredients in the recipe. Your analysis of the diversity and richness of nutrients must therefore consider their source. This requires you to know what is food! You will be evaluated based on your ability (1) to understand the NutriCal reports (2) link the data in the NutriCal reports to concepts learned in the course and (3) to create a table that clearly describes the macronutrient composition of this meal. This thoughtfully constructed table must include a clear descriptive title, appropriate labels for rows and columns with units and be well organized. For help with creating tables, please go to the Blog section of the course.  Maximum length of main body: 3 pages.
  2. Conclusion (5%). This will be a brief synopsis of your most relevant findings and can include suggestions of how to improve the meal. Maximum length 1/2 page.
  3. Literature cited (10%). Your report must include in-text citation. Cited work must include the course website and “What is Food?: A re-framing of human nutrition”. Note, you are not required to include references other than those provided from within this course. You are strictly forbidden to include nonacademic references (e.g. allaboutcarrots.com; Mimisfoodblog.com; etc.). Nonacademic references will lead to a deduction in your grade. 
  4. Appendix (5%).  A copy of the Spreadsheet and Bar Graph Reports generated by NutritionCalc Plus. Please note that I do not accept your Appendices separately through email: these emails are not answered and deleted immediately.  
  5. Respecting length and structure: (5%): 5 page-maximum (excluding appendices) using 12-font (Times New Roman), double-spaced with 1-inch (2.5 cm) margins.    

Late Penalties:

Once the deadline for uploading the assignment passes, I get flooded with emails with apologies and attached assignments. These assignments, even if submitted one minute late, are considered late and a 10% reduction in grade will be applied. 

An additional 10% penalty will apply for every additional day late.
