This is because consumers are keenly following on the advice of the food guide that highlights the health and nutritional benefit of plant-based protein such as legumes. Consumers are shifting to plant-based products due to a couple of reasons, including preservation of the environment, protecting animals, health benefits or concerns, and changing their preferences. The equilibrium price and quantity of products are affected by an upward shift in the demand and supply curve. When the supply curve goes up, the supply is reduced, and demand remains. Therefore the price increases and the quantity decreases.
