Week 8 Hi All, In this week’s reading Inglis and Gimlin point out that researchers from different disciplines tend to focus on either the macro dimensions (production, distribution, corporations, national and international regulatory bodies, etc.) or the micro dimensions (consumption, preparation, cultural value of food, etc.) of “food globalisations” (2009, p.5). Lewis and Huber state that 'while their [celebrity chefs] celebrity food identities stem from a set of food practices and ethics committed to the local sourcing of produce, knowing and growing one's own food and/or having a human connection with farmers and food sellers, their branded identities are often ironically embedded in the very marketized and corporatized foodways that their own food practices/ethics would seem to eschew' (2015, 290, italics mine). In other words, there seems to be almost a paradox between what celebrity chefs and so called social media 'influencers' preach (sustainable food etc.) and what they do (building commercial empires).
