In this module, we learned about how consumers make food choices, and how choices are constrained by economics or circumstances. There is a tension between individual food choice freedom and public health outcomes for the population, and there are both internal and external drivers for our food choices.

  • Which of our class themes did you hear come out (environmental, human health, social, economic, waste)?
  • What are the internal and external drivers and constraints that consumer face when making food choices? Did you identify with any of the food choice drivers discussed?

The two class themes I heard come out in this weeks material is environment and human health because these are the two biggest risk factors when it comes to consumers, their food decisions, and the aftermath of those choices. 

After reading 'Identifying the Effects of Environmental and Policy Change Interventions on Healthy Eating' , some of the obvious internal and external drivers that consumers are facing include advertising and the general information environment of the media.  U.S food industries emphasize on taste, low cost, and convenience of foods with health playing only a minor role in these consumer decisions. According to the article, among U.S adults, exposure to advertising for fruits and vegetables resulted in increased willingness to pay for these types of foods. Our social environment is another constraint that consumers face because they are constantly being shown fast-food or meat-based options in commercials, on the radio, and through the high number of fast-food chain restaurants available. 

Policies that I think would be successful in changing my food choices would be menu labeling identifying the possible effects on the environment. Governmental policy would most likely be the most successful in trying to change a consumer food pattern, as they can try and shape the affordability and accessibility in communities and retailers. Policies need to focus on availability of healthy options in retailers and organizations, the available nutritional information for products that harm the environment, and other things like placement of certain foods in grocery stores and creating optimal price points for healthier options. 

My one question regarding this statement is why can't we pass an initiative to standardize these policies that influence consumers to choose wisely and choose healthier?  Government policy has the best chance at implementing a change in order to further work on stabilizing our environments health.
