The reason why a researcher does not test two variables in the same assay is because it is hard to determine which variable had what effect. Using our example above, if the researcher also adds extra water in the experimental group, it cannot be determined whether the nitrogen helped the grass grow or the extra water. One variable needs to be tested at a time so we know its effect definitively.
